There has been a butchers shop in Ancaster for many years, ever since the time when the butcher sold his meat from his horse and cart and used the shop as a preparation room. How times have changed. We are now a well run, established family business and provide our customers with the high standard of service we believe they deserve.
We source 90% of our meat, ie. pork, beef and lamb, within a radius of approximately 15 miles from our shop. Our wholesaler, I G Topps, buys all his meat from the field, not from the market, which means less travelling for the animals. All our beef and lamb are grass fed.
All our beef is slaughtered at 20/22 months old. The breed is either Limousin, Lincoln Red or Limousin/Lincoln Red cross. After slaughter I G Topps will hang the meat for 2 weeks before we have it in the shop. All the beef we buy can be traced back to its field.
The lamb we use is mostly of the Suffolk breed and is also hung after slaughter before it arrives with us.
The breed of pigs is Large Whites which are of the highest quality. We make all of our own sausage with natural skins and English sage. We also make our own haslets and cook our own chines, beef and ham. Our ham is English, as is our sliced bacon. We cure all our own hams and bacon and make our own pork pies.
By now you will have noticed that we keep emphasising about "local"and "English." We pride ourselves in the fact that we only sell English meat through our shop. Our farmers produce such quality there is no need to go anywhere else.
We are also extremely proud to announce that we have won 5 awards in the Lincolnshire Poacher 2012 competition, including 3 gold awards for our Lincolnshire sausage, venison and chilli sausage and our homemade chicken and ham pie.
